Pakistani Kima inspired ground beef curry
Ingredients
1 large onion
4 Tbsp butter or coconut oil
1 lb ground beef
1 Tbsp curry powder
2 1/2 tsp salt (plus more for serving)
1 tsp black pepper
1 tsp garlic powder
1 tsp cinnamon
1 tsp ground ginger
1 tsp turmeric
3 medium sweet potatoes (white potatoes also work)
15 oz can of diced tomatoes
1 lb green beans (fresh or frozen) or another veg like peas
Plain whole milk yogurt, flatbread, or rice for serving (optional)
Instructions
In a large skillet, heat butter or oil.
Chop the onion and add it to the pot, saute until it becomes translucent.
Add the ground beef, curry powder, salt, pepper, garlic powder, cinnamon, ginger, and turmeric and cook until the meat is browned.
While the meat is cooking with spices, dice the sweet potatoes into small pieces and set aside.
To the browned meat, add the diced tomatoes, sweet potatoes, and green beans. (if you’re using peas or a vegetable that cooks fast, wait 15 mins to add)
Cover and simmer for 20 minutes or until the sweet potatoes have softened. Keep an eye on the pot and add water or broth if necessary.
Serve it up and enjoy! You can serve it with rice or flatbread but it can be a full meal on its own. Add a dollop of plain whole milk yogurt if you like.
If you’re brave and want to try adding organ meat to your diet, this recipe is not a bad one to hide it in- mince up a bit of beef or chicken liver and cook it with the meat. Organ meat is great for building back up your blood after giving birth. It also has lots of minerals that many of us may be deficient in. If you do want to try it, start slow and try to find the best quality that you can- pasture raised/grassfed+finished.
